Breakfast Mac & Cheese
Next time your kids ask for macaroni & cheese for breakfast, surprise them by saying YES! This rich, flavorful breakfast casserole is something kids and adults with both love!
Ingredients
- 1/2 (5 lb.) bag Mrs. Gerry's Premium Macaroni & Cheese 
- 1 lb. breakfast sausage 
- 1 red pepper, diced 
- 1 jalapeno pepper, diced 
- 1 medium onion, diced 
- 4 eggs 
- 5-6 refrigerated biscuits, cooked according to package directions, crumbled 
Instructions
- Preheat oven to 350 degrees F. 
- In a large skillet, cook and crumble breakfast sausage. Remove from pan and set aside. 
- In same skillet, sautee red pepper, jalapeno pepper and onion. When cooked through, combine in bowl with sausage. 
- Combine sausage mixture with 1/2 (5 lb.) bag of Mrs. Gerry’s Premium Macaroni & Cheese. Pour into greased oven-safe or cast iron skillet. 
- Whisk eggs then stir in crumbled biscuits. Pour on top of macaroni & cheese mixture. 
- Bake for 25-30 minutes until biscuits are golden brown and mac & cheese is heated through. Enjoy!
