Sweet Potato Casserole

Tastes like dessert, but call it a side dish, this delicious casserole is sweet, savory, and easy using our Mashed Sweet Potatoes as a base.

Casserole Ingredients

  • 6 large eggs

  • 1 (5 lb.) bag Mrs. Gerry’s Mashed Sweet Potatoes

  • ½ cup brown sugar

  • ½ tsp. salt

  • 1 tsp. ground cinnamon

  • ½ tsp. ground ginger

  • ½ cup butter, melted

  • 1 tsp. vanilla extract

Topping Ingredients

  • ½ cup butter, softened

  • ½ cup brown sugar

  • 1 cup chopped pecans

  • 1 ½ cups cornflake crumbs OR 2 cups mini marshmallows

Instructions

  1. Preheat oven to 375°F. In a large mixing bowl, beat eggs. Blend in sweet potatoes.

  2. Add remaining casserole ingredients and mix to combine.

  3. Pour into greased 9x13 inch pan.

  4. Bake at 375°F for 35 to 40 minutes.

  5. Meanwhile, combine all topping ingredients; set aside.

  6. Remove casserole from oven and sprinkle topping evenly over sweet potatoes.

  7. Bake for an additional 10 minutes.

    Serve hot. Makes 16 to 20 servings.
