Cucumber Mint Quinoa Stuffed Peppers
- Green peppers (could also use yellow or red peppers)
- Mrs. Gerry's Cucumber Mint Quinoa
- Feta cheese, optional
- Remove seeds and core from peppers.
- Stuff with Mrs. Gerry's Cucumber Mint Quinoa
- Cook in oven or microwave until pepper is cooked through and internal temperature is at least 165° F.
- If desired, top with additional Feta cheese and serve.
