Cucumber Mint Quinoa Stuffed Peppers

Ingredients

  • Green peppers (could also use yellow or red peppers)
  • Mrs. Gerry's Cucumber Mint Quinoa
  • Feta cheese, optional

Instructions

  1. Remove seeds and core from peppers. 
  2. Stuff with Mrs. Gerry's Cucumber Mint Quinoa
  3. Cook in oven or microwave until pepper is cooked through and internal temperature is at least 165° F.
  4. If desired, top with additional Feta cheese and serve.
