| RED PENNE TACO PASTA SKILLET | |

- 2 pints MRS. GERRY’S RED PENNE PASTA SALAD
- ½ lb. ground beef, browned, crumbled and drained
- 2 tbsp. dry taco seasoning mix
- ¼ cup. water
- ⅛ tsp. red pepper flakes
- salt and pepper to taste
- 1 cup shredded Mexican cheese
- 1 cup crushed nacho cheese tortilla chips
- salsa, optional
- Brown ground beef until fully cooked; drain off grease. Add taco seasoning and water; simmer 5-10 minutes. Add salad, pepper flakes, and salt and pepper to taste. Heat to 165º to 180ºF. Just before serving, sprinkle cheese on top and heat until melted. Serve with crushed tortilla chips and salsa, if desired. Makes 4-6 servings.
